Charcuterie
Charcuterie is a French term for a branch of cooking devoted to elaborate meat products, such as bacon, ham, sausage, terrines, galantines, ballotines, pâtés, and confit, primarily from pork.
Charcuterie is part of the garde manger chef's repertoire. Originally intended as a way to preserve meat before the advent of refrigeration, they are prepared today for their flavors derived from the preservation processes.

Daguzan Charcuterie is the culmination of a journey from the rich culinary traditions of Gascony, France, to the lush landscapes of Hawaii. Co-founded by Pierre Daguzan and Courtney Ke’alaohalaomapuana Daguzan, our company blends the best of French charcuterie with the unique flavors of Hawaii's local produce.
Pierre Daguzan - Co-Founder and Visionary: Pierre Daguzan brings an unparalleled passion for fine food and culinary heritage to the helm of Daguzan Charcuterie. Born in Toulouse, one of France's renowned food capitals, Pierre was raised in a family deeply devoted to the art of cuisine and the treasures of "terroir." His father, a culinary authority, authored "Cuisine Gascogne," a culinary treasure trove that not only compiles generations of family recipes but also narrates the story of Gers, a captivating region within Gascony, France. After spending six years in China, Pierre moved to Hawaii in 2015. He quickly recognized the islands' perfect environment for developing fine food products using local and wild deer and organic-raised pigs. These invasive species, when sustainably managed, contribute to both the local ecosystem and our high-end food offerings.
Courtney Ke’alaohalaomapuana Daguzan - Co-Founder and Director of Sales & Marketing: Courtney Ke’alaohalaomapuana Daguzan, an esteemed luminary in the realm of hospitality and operations, plays a pivotal role as the Co-Founder and Director of Sales & Marketing at Daguzan Charcuterie. Her illustrious career has been marked by leadership roles as Director of Sales at prestigious hotel establishments and upscale resorts, where she orchestrated unparalleled guest experiences. Courtney's visionary leadership not only solidifies her reputation as a trailblazer but also positions her to oversee impactful initiatives that leave an indelible mark on Hawaii's professional landscape.
