What Is Charcuterie? A Guide to the French Art of Preserved Meats

Daguzan Charcuterie handcrafted pâté and rillettes spread

Charcuterie is one of the oldest and most revered culinary traditions in France. The word itself comes from the French chair (flesh) and cuit (cooked) — a term that once described shops specializing in cooked or processed pork products.

Today, charcuterie encompasses a wide world of cured, smoked, and cooked meat preparations: pâté, rillettes, mousse, terrines, saucisson, and more. Each product is the result of careful craftsmanship, quality ingredients, and time-honoured technique.

The Core Products

Assortment of Daguzan Charcuterie products from the Holiday Party Box

  • Pâté — A smooth or coarse mixture of ground meat, fat, and aromatics, baked and served cold. Our Moloka'i Venison Pâté and Wai'anae Pork Pâté are classic expressions of this form.
  • Rillettes — Slow-cooked and shredded meat packed in its own fat, spreadable and rich. Think of it as the French answer to pulled pork — but elevated.
  • Mousse — The lightest of the three, whipped to a silky texture. Our North Shore Chicken Liver Mousse is delicate, creamy, and deeply flavourful.

Why Hawaii?

Hawaii's extraordinary local ingredients — wild axis deer from Moloka'i, heritage pork from Wai'anae, free-range chicken from the North Shore — are the perfect canvas for French charcuterie technique. The result is something entirely new: the flavours of Gascony, rooted in the land of Hawai'i.

At Daguzan Charcuterie, we use no preservatives, no shortcuts. Just meat, fat, spice, and time.
