Our Craft

Charcuterie

Charcuterie is a French term for a branch of cooking devoted to elaborate meat products — terrines, galantines, pâtés, rillettes, and confit, primarily from pork.

Originally intended as a way to preserve meat before the advent of refrigeration, these preparations are crafted today for the depth of flavour that only patience, quality ingredients, and skilled hands can produce.

At Daguzan Charcuterie, we honour that tradition — and bring it to the islands of Hawai'i.

Terroir

Terroir embodies the unique conditions in which food is grown or produced, bestowing distinct characteristics to the final product.

Gascony, in southwestern France, is the heartland of charcuterie tradition — renowned for its poetic culinary techniques and a rich land that has cultivated a gastronomy reflecting its vibrant culture and history.

Hawai'i, we discovered, carries exactly the same spirit. Wild forests, volcanic soil, and a community of farmers dedicated to raising animals the right way — the terroir is extraordinary.

Our Story

Gascony & Hawai'i

Daguzan Charcuterie represents a fusion of French charcuterie traditions with Hawaiian ingredients and flavours, co-founded by Pierre Daguzan and Courtney Ke'alaohalaomapuana Daguzan.

Pierre Daguzan was born in Toulouse, France. His father authored Cuisine Gascogne, documenting generations of family recipes. After six years in China, Pierre moved to Hawai'i in 2015 and recognised the islands' extraordinary potential — wild Moloka'i venison, naturally raised Wai'anae pork, free-range North Shore chicken — and set out to make the finest charcuterie from it.

Courtney Ke'alaohalaomapuana Daguzan brings deep roots in Hawai'i and over a decade of director-level experience across premier hotels and resorts throughout the islands. Her understanding of hospitality and her love of her home shaped the brand's soul as much as any recipe.

Our Vision

"At Daguzan Charcuterie, we are committed to producing fine meat products using only local Hawaiian ingredients and traditional French recipes — celebrating Hawai'i's unique flavours while respecting Gascony's culinary heritage, and emphasising quality, sustainability, and community."
